Chicken Chapli Kebab Recipe

This recipe is one of my favorite side dishes – chicken chapli kebab. It is a famous dish in Pakistan and northern India. You can make it with ground chicken, lamb, or beef. It is also very healthy, with no oil added to the kebabs. Although I love eating it, buying chapli kebabs from restaurants can get very expensive. Since I know how much the ingredients cost, I wanted to give it a try at home. It was surprising extremely easy to make and yes, delicious too! One can easily buy “kebab masala” (spices) packet from a store and just mix the contents of the packet with chicken and onion and make it. But I wanted to use the ingredients I already have at home that I use for all other Indian recipes. As such, I didn’t have to purchase any special ingredients to make the kebabs.

So why is it called chapli kebab? Because the kebabs are flat patties, I believe the word originates from the Hindi/Urdu word “chappal”, which are flat sandals. I have a chappal just like this one at home!

Anyway, with the history and background done, let’s get to the fun part – how to make these delicious kebabs!

Ingredients:

2 lbs. ground chicken

1 egg, beaten

1 finely chopped onion

2 tablespoon salt

2 tablespoon cumin coriander powder

2 tablespoon ginger garlic paste

1 teaspoon garam masala (a blended mixture of various spices)

1 teaspoon chilli powder (vary per your spice tolerance)

4-5 tablespoon coriander leaves (cilantro) for flavor

Here’s how all the ingredients look –

Mix everything together well, ensuring all spices are evenly distributed. Refrigerate for about an hour. Shape the meat into patties 2-2.5 inches in diameter and about 1 cm in thickness. Grill for 8-10 mins (4-5 mins each side) until chicken is well done. You can also cook the patties on a nonstick pan on medium heat till the chicken turns a dark brown color on the outside. Check the inside to ensure it is properly cooked.
